Roast Beef Sliders are the kind of recipe that makes you look like you tried way harder than you did—and who doesn’t love that? Soft rolls, gooey cheese, tender beef, and a buttery, flavorful topping come together for the ultimate comfort food. They’re perfect for everything from game day spreads to quick weeknight dinners, and the best part? You can assemble them ahead of time, pop them in the fridge, and bake when you’re ready to wow everyone. Trust me, these sliders won’t last long!
Preheat your oven to 350ºF (180ºC). Grease a 9x13-inch baking pan with 2 tablespoons of butter and line it with parchment paper to prevent sticking. Slice the Hawaiian rolls in half horizontally without separating the rolls, and place the bottom half in the prepared pan.

Layer 6 slices of provolone cheese evenly across the bottom rolls, followed by the thinly sliced roast beef. Sprinkle the French-fried onions on top for crunch, and then layer the remaining 6 slices of provolone cheese over the onions. Place the top half of the rolls over the layers to complete the sliders.
Melt the remaining 2 tablespoons of butter in a microwave-safe bowl. Stir in 1 tablespoon of au jus mix, Worcestershire sauce, and everything bagel seasoning until smooth. Brush this butter mixture generously over the tops and sides of the rolls, reserving a small portion for dipping.
Bake the sliders uncovered for 15-20 minutes, or until the cheese is melted and the tops are golden brown. Remove from the oven and let cool slightly before cutting along the roll divisions. Serve warm with the reserved butter mixture on the side for dipping. Enjoy!
Notes
Use fresh, soft rolls: Hawaiian rolls or similar soft rolls work best for a fluffy and flavorful bite.
Shred leftover roast beef: If you’re using leftovers, shredding the beef helps it layer more evenly.
Add more crunch: Feel free to double the French-fried onions for extra texture.
Line the pan for easy cleanup: Parchment paper makes lifting the sliders out of the pan much easier.
Customize the cheese: While provolone is classic, you can swap it for Swiss or cheddar to suit your taste.
Don’t skimp on the butter mix: This is key to getting flavorful, golden tops. Use every drop!
Serve immediately: These sliders are best served fresh and warm for the ultimate gooey cheese pull.
