Pat the turkey breast dry with a paper towel to remove any excess moisture. Brush it with olive oil, making sure to coat the entire surface. Place the turkey in a baking dish lined with parchment paper to prevent sticking and make cleanup easier.

In a small bowl, combine the onion powder, garlic powder, thyme, paprika, oregano, salt, and pepper. Rub this spice mixture evenly over the turkey breast, ensuring every side is covered for even seasoning.

Place the turkey in the oven and roast for 1 to 1 ½ hours, or until the internal temperature reaches 165°F (74°C).
While the turkey is roasting, prepare the glaze by mixing the maple syrup and mustard together in a small bowl until well combined and smooth.

Once the turkey has finished roasting, take it out of the oven and brush the glaze generously over the top. Return it to the oven for another 5 minutes or until the glaze turns golden brown and slightly caramelized. Let the turkey rest for a few minutes before slicing, then serve with the drippings from the pan for added flavor.
