Equipment

Ingredients

  • 2 ½ pounds turkey breast
  • 2 tablespoons olive oil
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon thyme
  • ½ teaspoon paprika
  • ½ teaspoon oregano
  • Salt and pepper

For the glaze:

Instructions

  • Preheat the oven to 350°F (180°C).
  • Pat the turkey breast dry with a paper towel to remove any excess moisture. Brush it with olive oil, making sure to coat the entire surface. Place the turkey in a baking dish lined with parchment paper to prevent sticking and make cleanup easier.
2 ½ pounds turkey breast, 2 tablespoons olive oil
  • In a small bowl, combine the onion powder, garlic powder, thyme, paprika, oregano, salt, and pepper. Rub this spice mixture evenly over the turkey breast, ensuring every side is covered for even seasoning.
½ teaspoon onion powder, ½ teaspoon garlic powder, ½ teaspoon thyme, ½ teaspoon paprika, ½ teaspoon oregano, Salt and pepper
  • Place the turkey in the oven and roast for 1 to 1 ½ hours, or until the internal temperature reaches 165°F (74°C).
  • While the turkey is roasting, prepare the glaze by mixing the maple syrup and mustard together in a small bowl until well combined and smooth.
¼ cup maple syrup, ¼ cup mustard
  • Once the turkey has finished roasting, take it out of the oven and brush the glaze generously over the top. Return it to the oven for another 5 minutes or until the glaze turns golden brown and slightly caramelized. Let the turkey rest for a few minutes before slicing, then serve with the drippings from the pan for added flavor.

Notes

  • Try Fresh Herbs: If you have fresh thyme or oregano, feel free to use them for even more flavor.
  • Perfect Glaze: If you find the glaze too thick to spread, warming it up slightly will loosen it. You can do this in the microwave or on the stovetop. It should be just thin enough to coat the turkey evenly but not too runny.
  • Watch the Oven: Check on the turkey during the last 15 minutes of roasting to ensure it doesn’t dry out.
  • Use a Thermometer: Always use a meat thermometer to make sure the internal temperature hits 165°F (74°C) for safety.
  • Rest Time: Let the turkey rest for about 10 minutes before slicing. This keeps the meat juicy and tender.
  • Cut Against the Grain: Slice the turkey breast against the grain for the most tender pieces.
  • Leftover Glaze: If you have extra glaze, don’t throw it out! Serve it on the side as a dipping sauce for even more flavor, or save it for future meals. You can also drizzle it over roasted veggies for a quick side dish.
