Cream the butter with the brown and white sugars in a large bowl until the mixture is soft and creamy. This should take about 5 minutes.
1 cup butter, 1 cup light brown sugar, ¾ cup granulated sugar
Add the eggs, vanilla, and blue food coloring, mixing until everything is fully combined and the color is evenly distributed.
2 eggs, 2 teaspoons vanilla, 2 teaspoons blue food coloring
Add the flour, salt, and baking powder, stirring gently with a wooden spoon. Mix only until the dough starts to come together—don’t overmix.
3 cups flour, 1 teaspoon salt, 2 teaspoons baking powder
Fold in the chocolate chips, white chocolate chips, chopped Oreos, chopped chocolate chip cookies, and chocolate chunks, saving a bit of each for topping the cookies. Place the dough in the refrigerator to chill for 30 minutes.
1 cup chocolate chips, 1 cup white chocolate chips, 1 cup Oreos, 1 cup chocolate chunks, 1 cup chocolate chip cookies
Preheat your oven to 180ºC (350°F) and line a baking sheet with parchment paper. Scoop around 2 tablespoons of dough, flatten it slightly, and place a chocolate cookie disc on top. Cover with 2 more tablespoons of dough, pressing to seal the edges and form a round shape. Sprinkle some of the reserved toppings on top.
12 chocolate cookies
Bake the cookies in the preheated oven until the edges are just golden, around 12-15 minutes. Let them cool on the baking sheet before serving.
