I love making Hamburger Soup when I need a hearty, budget-friendly meal that fills everyone up on busy weeknights. This comforting soup has browned ground beef in a rich tomato broth flavored with Worcestershire sauce and Italian herbs, with tender potatoes and vegetables in every spoonful. It’s perfect for meal prep, cozy dinners, or anytime you want something warm and filling. The soup keeps in the fridge for up to 4 days or freezes for 3 months.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 cup onion diced
  • 2 cloves garlic minced
  • ¼ cup tomato paste
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Italian seasoning
  • ½ teaspoon sugar
  • 1 medium potato cut into ½-inch cubes
  • 2 cups frozen mixed vegetables
  • Salt and black pepper to taste

Instructions

  • Heat the olive oil in a large pot over medium-high heat. Add the ground beef and cook for 8 to 9 minutes, breaking it up, until browned.

  • Add the onion and garlic and cook for 3 minutes, until softened and fragrant.

  • Add the potatoes and frozen vegetables. Simmer for 10 to 15 minutes, until the potatoes are tender.

  • Don't skip browning the beef: Let the ground beef develop caramelized bits in the pot before adding other ingredients for deeper flavor.
  • Use quality beef broth: The broth is the base of the soup, so using a flavorful beef broth instead of water makes a huge difference in taste.
  • Perfect for chilly days: Season with kosher salt for better control, use lean beef to reduce grease, and cut potatoes into large chunks for a heartier, rustic texture.
  • Customize the soup: Swap ground turkey for beef, use red potatoes instead of regular, add celery with the onions, stir in pasta or rice near the end, replace tomato paste with tomato sauce, use onion powder and garlic powder instead of fresh, add chopped cabbage with vegetables such as beans snd corn, substitute some broth with tomato juice, or make it in a crock pot on low for 6 to 8 hours.
  • Taste before serving: Season with salt and pepper at the end, after the soup has simmered, since the flavors concentrate as it cooks.
