Preheat your oven to 350°F (180°C). Thinly slice the leeks, and in a small bowl, whisk together the cornstarch with ¼ cup of milk until smooth.

In a large pot, melt the butter over medium-high heat. Add the leeks and cook, stirring frequently, for about 15 minutes, until they are soft and creamy.
