Ingredients

  • 2 onions large
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 egg
  • 1 cup milk
  • Breadcrumbs as needed optional
  • Frying oil

Instructions

  • Cut the onions into 1-inch thick slices.
    2 onions large
  • In a large bowl, combine flour, baking powder, salt, paprika, egg, and milk to form a thick batter.
1 ¼ cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon salt, 1 teaspoon paprika, 1 egg, 1 cup milk
  • Transfer them to a tray and sprinkle with some breadcrumbs (optional).
    Breadcrumbs as needed
  • Heat the oil to medium-high (should be around 180ºC (350°F), you can test it by throwing a piece of bread or batter in, it should float and start bubbling softly - if it sinks it’s too cool, if it bubbles a lot it’s too hot).
    Frying oil
  • Add the onion rings in batches and fry in both sides until they are golden brown. Transfer to a paper-lined tray to remove excessive grease.
  • Serve with herby mayo, BBQ, or spiced ketchup.

Notes

  • Slice Evenly: Uniform slices mean evenly cooked onion rings.
  • Keep Oil Hot: Maintain the oil temperature to ensure each batch is as crispy as the first.
  • No Overcrowding: Fry in small batches to avoid the rings sticking together and to keep the oil temp steady.
  • Season Immediately: Salt them right after frying for the best flavor.
  • Beer Batter Option: For an extra light and crispy batter, swap out half the milk for beer.
  • Onion Types: Sweet onions like Vidalia or Walla Walla are ideal because they’re milder and sweeter, which complements the savory batter perfectly. However, yellow and red onions also work well if you prefer a stronger onion flavor.
  • Extra Crispy: Make sure your oil is hot enough before frying (around 350°F) and don’t overcrowd the pan. Also, consider using a batter with cornstarch or beer to achieve that extra crunch.
  • What can I do with leftover onion rings? Besides reheating them, you can chop them up and toss them into omelets, salads, or on top of a hot, cheesy casserole for added crunch and flavor.

Storage and Reheating Instructions

  • Cool: Let the onion rings cool completely at room temperature to avoid trapping steam and moisture when you store them.
  • Use Paper Towels: Layer a sealable container with paper towels to absorb any excess oil and moisture, keeping the onion rings crisper.
  • Refrigerate: Store in the fridge in an airtight container. They'll last for up to 3 days.
  • Reheat: Revive your onion rings by reheating them in the oven or air fryer at 350°F until they're hot and crispy again. Avoid the microwave to keep them from getting soggy.
