Cook pasta according to package directions, and save 1 cup of pasta water.
1 pound spaghetti pasta
Heat a large skillet to medium heat, and add 2 tablespoons olive oil, once heated.

Sauté minced garlic for 30 seconds.

Add spinach and allow to wilt, then add the sun-dried tomatoes.
5 ounces fresh spinach, ¼ cup chopped sun-dried tomatoes
Turn the heat down to medium-low and add cream cheese and heavy cream, until the cheese has melted, stirring constantly, to prevent burning. Then add the parmesan cheese and stir to melt.
8 ounces garlic and herb cream cheese, 1 cup heavy cream, ¼ cup parmesan cheese
Once everything is melted into a sauce, add the spaghetti and gently toss everything to coat. Add pasta water as necessary to help coat the noodles.
Add salt and pepper to taste.
