Ingredients

  • 6 tablespoons unsalted butter cubed
  • 1 ¼ cups all-purpose flour
  • cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • cup milk
  • 1 teaspoon vanilla extract
  • 2 ½ cups pecans chopped
  • 1 ⅓ cup brown sugar
  • 1 ½ cups boiling water
  • Ice cream to serve
  • Caramel sauce to serve

Instructions

  • Preheat your oven to 390°F (200ºC). Place the butter in a small baking dish and put it in the oven to melt. Once melted, remove it from the oven.
    6 tablespoons unsalted butter
  • In a large bowl, sift together the flour, granulated sugar, baking powder, and salt. Add the milk and vanilla extract, then whisk until everything is combined smoothly.
1 ¼ cups all-purpose flour, ⅔ cup granulated sugar, 2 teaspoons baking powder, ½ teaspoon salt, ⅔ cup milk, 1 teaspoon vanilla extract
  • Drop spoonfuls of the batter into the baking dish with the melted butter, distributing it evenly without mixing.
  • Sprinkle the chopped pecans evenly over the batter. Then, sprinkle the brown sugar evenly over the top of the pecans.
    2 ½ cups pecans, 1 ⅓ cup brown sugar
  • Carefully pour the boiling water evenly over the entire cobbler, being careful not to stir.
    1 ½ cups boiling water
  • Place the baking dish back in the oven and bake for about 25-35 minutes, or until the top is golden brown and the cobbler is set. Serve warm, topped with optional ice cream and caramel sauce.

Notes

  • Butter Melt Tip: Melt the butter in the oven while preheating. It’s efficient and gets the dish perfectly hot for the batter.
  • Batter Placement: After dropping the batter over the melted butter, avoid stirring. Letting the batter sit on top helps create that classic cobbler texture where the butter bubbles up, making the edges wonderfully crisp while keeping the center soft and gooey.
  • Even Pecan Spread: Spread pecans evenly so every bite is packed with a crunchy, nutty flavor.
  • Brown Sugar Coating: Make sure to coat the top evenly with brown sugar—it’s what forms that crave-worthy caramelized layer.
  • Boiling Water Technique: Pour the boiling water slowly and evenly over the top of the dish, making sure to cover it without stirring. This might seem unusual, but it’s what makes the cobbler come out with a saucy, caramelized base under the crispy top.
  • Check for Golden Brown: The perfect cobbler is golden brown and crispy on top—keep an eye on it while baking.
