Notes
Cheese: While this recipe uses Gruyere and cheddar, feel free to experiment with other cheeses. Pepper Jack cheese can add a nice kick, and Swiss cheese gives a lovely melt.
Make-Ahead: You can assemble this casserole the night before and pop it in the oven in the morning. Just cover it and keep it in the fridge overnight.
Can I use egg whites instead of whole eggs? Sure can! If you're looking to lower the fat content, using egg whites is a great option. Just remember, you may need to adjust the quantity since egg whites are less voluminous than whole eggs.
Leftover Veggies: This recipe is great for using up leftover veggies. Just about anything works—spinach, zucchini, bell peppers, you name it.
Customizing Protein: Not a fan of pork sausage? Swap it out for breakfast sausage, bacon, ham, or even a vegetarian alternative for a different flavor profile.
Egg Ratio: If you prefer a firmer casserole, you can add an extra egg or two. This will help bind the ingredients together more solidly.
Vegetarian option: Swap the pork sausage for a vegetarian alternative or extra veggies. Mushrooms, spinach, and zucchini are great for adding bulk and flavor.
Is this casserole keto-friendly? Yes! Just check the carb content of your sausage to make sure it’s keto-friendly too.
Storage & Reheating Instructions
Cool Down: Allow the casserole to cool completely before you store it.
Refrigerate: Transfer the cooled casserole to an airtight container and refrigerate. Properly stored, it will keep for 3 to 4 days.
Freeze: If you want to extend its shelf life even further, you can freeze the casserole. Cut it into individual servings, wrap each piece tightly in plastic wrap, and then foil. Stored this way, it can last for up to 3 months. Just thaw overnight in the fridge before reheating.
Reheating: To reheat, you can either use the oven or the microwave. If using the oven, cover the casserole with foil to prevent it from drying out and bake at 350°F until heated through. For the microwave, a couple of minutes on high should do the trick, but you might want to cover it with a microwave-safe lid or paper towel to keep the moisture in.
