Ingredients

  • 1 ½ cup bacon cut bacon and cooked
  • 1 cup cream cheese
  • 4 tablespoons mayonnaise
  • ½ cup chives minced
  • 1 jalapeño seeded and diced
  • 1 cup sharp cheddar and mozzarella mix shredded
  • ½ teaspoon cayenne pepper
  • ½ teaspoon garlic powder

Instructions

  • In a small bowl, mix half of the bacon, cream cheese, mayonnaise, chives, jalapeño, cheese, cayenne pepper and garlic powder.
1 ½ cup bacon, 1 cup cream cheese, 4 tablespoons mayonnaise, ½ cup chives, 1 jalapeño, 1 cup sharp cheddar and mozzarella mix, ½ teaspoon cayenne pepper, ½ teaspoon garlic powder
  • Scoop 1 tablespoon balls of the mixture and transfer to the bacon to roll them in the bites. Refrigerate for at least 2 hours until they set and are firm to serve.
  • Serve and enjoy your Bacon Popper Cheeseballs!

Notes

  • Cream Cheese: Make sure your cream cheese is at room temperature before mixing to avoid lumps for a smoother texture.
  • Bacon: Cook the bacon until it's extra crispy. This not only makes it easier to crumble but also adds a delightful crunch.
  • Control the Heat: If you prefer a milder flavor, remove all the seeds from the jalapeños. For extra kick, leave some seeds in.
  • Mixing It Up: You can add different herbs like parsley or dill for an added layer of flavor.
  • Cheese: Feel free to experiment with different types of cheese, such as pepper jack or gouda, to find your favorite combination.
  • Make Ahead: You can make these cheese balls a day in advance. Just keep them wrapped in the fridge until you're ready to serve.

Storage Instructions

  • Refrigerate: Store any leftover cheese balls in an airtight container in the refrigerator. They’ll stay fresh for up to 3-4 days.
  • Keeping Them Crisp: To help maintain their crispiness, you might want to re-roll them in some freshly cooked bacon before serving again, especially if they've absorbed moisture while in the fridge.
  • Freeze: These cheese balls freeze well. Just place them on a baking sheet in the freezer until solid, then transfer to a freezer-safe bag or container. They can be kept frozen for up to a month.
  • Thawing Instructions: When ready to eat, thaw them in the refrigerator overnight. For best results, let them sit at room temperature for about 10-15 minutes before serving.
