You can make them ahead, store them in the fridge, or even freeze them for later, so they’re always ready when you need them.
In a bowl, combine the cheese and jalapeños and press them into 1-inch balls. Squeeze them so they are very compacted. Freeze for an hour until they are solid and hard.
2 cups Pepper Jack cheese, 2-3 jalapeños
Prepare a working station with a bowl of flour, a bowl with the egg whisked with the milk, and a bowl of breadcrumbs mixed with cayenne pepper, paprika, and garlic powder.

Dip each ball in the flour, then in the egg mixture and lastly in the breadcrumbs.
Place them in the air fryer basket and cook at 390°F (200ºC) for 10 minutes - or until they are golden brown.
Transfer to a sheet lined with kitchen towels and let them cool a bit before serving.

Pack Tightly: The cheese mixture needs to be really compact so it doesn't fall apart during coating or cooking. Use firm pressure when shaping.
Don’t Skip the Freeze: This step makes a huge difference. It keeps the cheese from oozing out too soon and helps the bites hold their shape.
