Ingredients

  • ¾ cup butter
  • 1 ¼ cups dark chocolate chopped into small pieces
  • 3 eggs
  • 2 egg yolks
  • 2 teaspoons vanilla extract
  • ¾ cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon cocoa powder
  • ½ cup dark chocolate chips
  • ½ teaspoon salt
  • Sea salt flakes to serve

Instructions

  • Line a 9x9-inch baking tray with parchment paper. Place the butter and chopped chocolate in a microwave-safe bowl and microwave for 1 ½ minutes. Stir, then continue microwaving in 1-minute intervals until fully melted and smooth. Set the chocolate mixture aside.
¾ cup butter, 1 ¼ cups dark chocolate
  • In a large bowl, beat the eggs, egg yolks, and vanilla until fluffy. Add half the brown sugar and beat again. Add the rest of the sugar and continue beating until the mixture triples in volume.
3 eggs, 2 egg yolks, 2 teaspoons vanilla extract, ¾ cup brown sugar
  • Carefully pour the melted chocolate into the egg mixture, aiming along the sides of the bowl to keep the batter airy.
  • Sift together the flour, cocoa powder, and salt, and gently fold them into the batter until smooth and glossy.
2 tablespoons all-purpose flour, 1 tablespoon cocoa powder, ½ teaspoon salt
  • Add the chocolate chips and mix until they’re evenly distributed. Pour the batter into your prepared baking tray, and sprinkle a few extra chocolate chips on top if you’d like.
    ½ cup dark chocolate chips
  • Place the pan in the air fryer basket and bake at 325°F (160°C) for 15 minutes. Let the brownies cool completely in the pan.
  • Once cooled, remove from the pan, cut into squares, and sprinkle with a pinch of sea salt flakes for an extra flavor boost.

Notes

  • Achieve Chewiness: Avoid overmixing once the flour is added. Overmixing can lead to tougher brownies instead of that perfect chewy texture.
  • Microwave Melting: To prevent scorching, microwave the chocolate in short bursts, stirring each time.
  • Room-Temperature Eggs: Using room-temp eggs makes for a fluffier batter and helps them whip up to a better volume.
  • Size Matters: Make sure your baking tray fits in the air fryer basket with enough space for airflow.
  • Add Extra Chocolate Chips: For a richer brownie, toss in an extra handful of chocolate chips—no such thing as too much chocolate!
  • Cool Completely Before Slicing: Letting the brownies cool fully before cutting gives them a chance to firm up for cleaner, neater slices.
  • Store with Care: Brownies stay chewier when kept in an airtight container.
