You’ll be surprised how easily these come together once you follow my simple step-by-step directions.
Mix the Sausage Base
In a large mixing bowl, combine the ground turkey with olive oil, salt, pepper, sage, garlic powder, and maple syrup. A large glass mixing bowl like this one is perfect for working with mixtures like this without tipping or spilling.
Mix gently with your hands or a spoon, just until everything is evenly combined, so the patties stay tender; overmixing can make them tough. If you want to keep your hands clean, a sturdy wooden spoon does the job without overworking the meat.

Shape the Patties
Divide the mixture into six even portions and shape them into round, equal-sized patties about ½ inch thick. A cookie scoop helps portion them evenly so they cook at the same rate.
If the mixture feels sticky, dampen your hands a little before shaping; it makes a big difference. Press lightly to flatten them so they cook evenly.
You can use a burger press here or even the back of a measuring cup to gently flatten the patties without squishing the edges.
Cook Until Golden
Heat a bit of oil in a nonstick skillet over medium heat to prevent sticking. I use this large skillet; it’s nonstick, and makes cleanup super easy.
Add the patties in a single layer, making sure not to overcrowd the pan so they have room to brown properly. If you add too many at once, they’ll steam rather than sear, so cook them in batches if needed, about 2–3 minutes per side, until nicely browned.
A wide silicone spatula works great for flipping without tearing them apart. Note that the internal temperature should reach 165°F before removing them from the heat. That way, you know they’re fully cooked through and safe to eat.
I use a digital meat thermometer to check quickly without cutting them open. Take them off the heat as soon as they’re done to prevent overcooking and keep them moist and tender.

Serve and Enjoy
Serve these golden patties warm, garnished with fresh herbs for a pop of color, and enjoy alongside eggs, a cheddar biscuit, or inside a breakfast sandwich! They’re also great as crumbles to breakfast burritos or as meal prep for grab-and-go mornings.
If you’re transporting these for a brunch or breakfast potluck, pack them in a hard-sided container so they stay intact and don’t get squished. Then, tuck the container inside an insulated casserole carrier to hold the heat until you’re ready to serve.

- Enjoy warm with eggs, toast, or as a breakfast sandwich filling.
Notes
- Boost the flavor: Add a pinch of ginger or thyme for a subtle warmth that gives the patties more depth.
- Build layers of flavor: Try adding a small amount of ginger for brightness or thyme for earthiness. Completely optional, but it makes a difference.
- Test a small piece first: Cook a tiny bit of the mixture to check the seasoning before shaping all the patties.
- Keep your hands damp: Lightly wet your hands before shaping so the turkey mixture doesn’t stick.
- Sear on high heat for a deeper crust: For a crispier edge, start at high heat. Then, lower it to medium to finish cooking. Watch closely to avoid overcooking; high heat browns fast, and leaving them too long can dry out the centers.
- Turn up the heat: Sprinkle in a little cayenne pepper or red pepper flakes if you want a slight kick, just enough to wake up the spices without overpowering the maple notes.
- Don’t skip the thermometer: Make sure the center reaches 165°F for safe and perfectly cooked sausage.
- Make ahead: You can form the patties, cover, and refrigerate overnight so they’re ready to cook in the morning. They also freeze well, raw or cooked. Just layer with parchment paper in a freezer bag so they don’t clump together.

How to Store Leftovers
Once the patties have cooled completely, store them in an airtight container in the refrigerator for up to 3–4 days. You can use these glass food containers to help keep the patties fresh and prevent any fridge odors from seeping in.
If you want to freeze them, place them in a freezer bag, separating each patty with parchment paper to prevent them from sticking and freezing together. These reusable freezer bags keep everything sealed tight and are excellent space savers.
They’ll keep well for up to 3 months. To reheat, thaw overnight in the fridge. Then, warm them gently over the stovetop or in the oven (not the microwave) until heated through for the best texture.
