Easy Cowboy Casserole Recipe With Tater Tots

Cowboy Casserole is what I make when I want taco night without the assembly line, everyone building their own plate while the first tacos go cold. It layers taco-seasoned beef, corn, and tomatoes, and tops them with tater tots and melted cheese.

One pound of beef stretches to six servings here, bulked out with corn, tomatoes, and a diced pepper, and the whole thing bakes in a single dish.

Lean ground beef is the base. I go for a leaner grind so there’s less fat to pour off after browning.

Mexican taco seasoning is what seasons the beef. A store packet or your own blend both work; the recipe uses two tablespoons for one pound.

Crushed roasted tomatoes make the sauce, and the method simmers them for ten minutes. Canned corn, drained, adds a little sweetness and bulk. The diced green bell pepper goes in near the end of the stovetop step rather than at the start.

On top go frozen tater tots and a layer of Mexican shredded cheese. Sharp cheddar or Monterey Jack are approved swaps if that’s what you have. Fresh cilantro at the end is an optional garnish.

How to Make Cowboy Casserole

Brown the beef

Heat the oven to 355°F (180°C). Set a non-stick skillet over medium-high heat and cook the ground beef, breaking it up frequently, until it’s browned and no lumps remain. Ground beef is safe at an internal temperature of 160°F.

Season it

Add the diced onion, minced garlic, and taco seasoning, and cook a few minutes more, until the onion softens.

Simmer crushed tomatoes for 10 minutes, then stir in corn and diced bell pepper.

Build the filling

Pour in the crushed tomatoes and cook for 10 minutes, then adjust the salt and pepper. Stir in the drained corn and the diced bell pepper and mix well.

Assemble

Grease a baking dish with cooking spray and spread the meat mixture across the bottom. Arrange the frozen tater tots over the top, then cover them with the shredded cheese.

Then, top with shredded cheese and bake for 12 minutes until melted and bubbly.

Bake

Slide the dish into the oven and bake for 12 minutes, until the cheese has melted and the whole thing is bubbly.

Finish and serve

Scatter fresh cilantro over the top and serve it warm.

Don’t skip browning the beef. The original recipe notes make a point of this for flavor. Brown it fully before you build the filling.

Keep the filling from going watery. The original recipe notes suggest draining the tomatoes to cut excess liquid. The ten-minute simmer in the method also helps the filling thicken.

Recipe Variations

  • Use ground turkey or chicken instead of beef. The original recipe notes list this swap, so it’s supported by the site’s own notes rather than something I tested here. Cook ground poultry through to 165°F, a little higher than the 160°F for beef.
  • Add beans to stretch it further. A drained can of pinto or black beans stirred into the filling adds bulk and helps it feed more. I haven’t tested this in this recipe, so treat it as an untested swap.
  • Turn up the heat. The original notes suggest a diced jalapeño with the onion or a shake of chili powder if you want more spice, so that add-in is supported by the site’s own notes.

Leftovers? No problem. Here’s how to keep that cowboy casserole tasting great for later:

  • Cool & Airtight: Let the casserole cool to room temperature and then transfer leftovers to an airtight container. 
  • Fridge or Freeze: You can keep the casserole in the fridge for 3–4 days or freeze it for up to 3 months. I usually store mine in these Rubbermaid Brilliance containers—they’re leak-proof, don’t stain from tomatoes, and seal tight enough to keep freezer burn out. Just make sure the casserole is fully cooled before packing it up.
  • Reheating: Reheat in the oven or microwave until it’s heated through. If it’s frozen, let it thaw in the refrigerator overnight before reheating to ensure even warmth.

  1. This looks good, but was wondering what size can you use for the crushed tomatoes? 14.5 oz, 15 oz, or 28 oz.

  2. Not bad, but I do it a bit different.
    First, start with big cast iron skillet, brown everything, swap tomatos out for cream of something(mushroom, brocolii, even jalapeno) soup. Put cheese on before the tots. Then put pan in oven to bake.
    only one pan to clean up, low acidity so won’t hurt seasoning on cast iron, and cheese bubbles up between tots.
