Shape and cook the meatballs

Roll the mixture into balls, each about 1 ½ tablespoons in size. Place them in your air fryer basket in a single layer—work in batches if necessary.

Make the sauce

While the meatballs are cooking, heat a skillet over medium heat. Add the butter and let it melt, then whisk in the flour to form a roux. Gradually stir in the beef stock, ensuring there are no lumps.

Let it simmer until it thickens a bit, which should take a couple of minutes. Finish the sauce by stirring in the sour cream and Worcestershire sauce, then season with salt and pepper to taste.

Ingredients

  • 16 ounces lean ground beef
  • 1 onion diced
  • 1 egg
  • ¼ cup breadcrumbs
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cup beef stock
  • ¼ cup sour cream
  • 2 tablespoons Worcestershire sauce

Instructions

  • In a bowl, combine the ground beef, onion, egg, breadcrumbs, nutmeg, salt and pepper. We like mixing it first with a spoon until it’s incorporated, then we mix it with our hands, so the mixture is fully combined and soft.
    16 ounces lean ground beef, 1 onion, 1 egg, ¼ cup breadcrumbs, ½ teaspoon salt, ½ teaspoon pepper, ¼ teaspoon ground nutmeg
  • Form and roll the meatballs with your hands – they should be around 1 ½ tablespoons in size.
  • Arrange the meatballs in batches in the air fryer basket. Spray with a bit of cooking oil and cook for 7 minutes at 180ºC (350°F). Shake them a bit, and cook them for 5 more minutes.

  • Heat a skillet to medium, add the butter, and let it melt. Then, add the flour and mix well to form a roux (a thick paste).
