Ever since I served these air-fried bites, my family’s been skipping restaurants, as I can easily whip them up for gamedays, holidays, or weekend snacks without anything going to waste. I’ve saved a lot by making these bites at home, and you can too. You can even store leftovers for days in the fridge or months in the freezer and reheat them, and they’ll taste just as new.

How to Make Air Fryer Rattlesnake Bites with Step-By-Step Instructions

You’ll have no trouble pulling off this recipe if you follow my simple steps.

Mix and Shape the Filling

Shred the Pepper Jack cheese and dice the jalapeños, and then combine them in a mixing bowl.

Once combined, use your hands to shape the mixture into small, 1-inch balls. Press them firmly so they’re tight and compact—this helps them hold together once they cook.

Scoop out some of the mixture and shape it into balls.

Freeze Until Solid

Line a tray with parchment paper and place the cheese balls on it. Pop them in the freezer for about an hour or until they’re fully solid.

Place the balls on a baking sheet and freeze for an hour.

Make sure there’s a little space between each one before you freeze them so the air can circulate around them in the freezer, and they freeze evenly without sticking together or losing their shape.

Freezing helps the cheese stay put and keeps the balls from melting into a mess when they cook.

Set Up Your Coating Station

While the bites are freezing, get your breading station ready. You’ll need 3 separate bowls for this step.

In one bowl, put the flour. In another bowl, whisk together the egg and milk until they’re well combined. In the last bowl, add the breadcrumb mix and season with cayenne pepper, paprika, and garlic powder. Laying it all out now makes coating quick and smooth.

Bread the Cheese Balls

Once your cheese balls are frozen solid, take them one at a time and roll them in flour, then dunk them in the egg mixture, and finally coat them in the seasoned breadcrumbs.

Press the crumbs on a little to make sure they stick—you want a nice even layer all over.

Next, dip them in the egg.

Air Fry Until Golden

Spray or brush a little oil onto the breaded balls and arrange them in a single layer in your air fryer basket. Cook at 390°F for about 10 minutes.

Don’t forget to flip or shake the basket halfway through so they brown evenly. You’re looking for that perfect golden crust on the outside.

Cool Slightly Before Serving

Transfer the finished bites to a paper towel-lined plate to soak up any excess oil. Give them a couple of minutes to cool down and set before biting in, as they’ll be hot inside straight out of the air fryer.

Here are my tips to help you make sure things go smoothly from start to finish:

  • Pack Tightly: The cheese mixture needs to be really compact so it doesn’t fall apart during coating or cooking. Use firm pressure when shaping.
  • Don’t Skip the Freeze: This step makes a huge difference. It keeps the cheese from oozing out too soon and helps the bites hold their shape.
  • Organize Your Station: Set up your flour, egg wash, and breadcrumbs in a row for a smooth flow—it saves time and mess.
  • Season the Breadcrumbs: That little extra flavor in the coating really makes each bite pop. Don’t just rely on the cheese and jalapeños.
  • Light Spray of Oil: A bit of oil on top gives you that fried finish without the actual frying. Too much can make them soggy, so spray just enough.
  • Air Fry in Batches: Give each bite space to crisp up. Overcrowding the basket leads to uneven cooking and soggy spots.
  • Flip for an Even Color: Halfway through cooking, give the basket a shake or turn the bites with tongs so they are crisp on all sides.
  • Let Them Sit: After air frying, let the bites cool for just a few minutes. The cheese will be molten and needs a minute to settle inside.

How to Store Leftovers

If you, surprisingly, have leftovers, let them cool to room temperature before storing. Place them in an airtight container and refrigerate for up to 3 days. They reheat well in the air fryer—just 3 to 4 minutes at 350°F should do it.

You can also freeze these bites for 2 to 3 months after they’ve been cooked. Arrange them on a baking sheet in a single layer and freeze until they’re solid, then transfer them to a freezer-safe bag or container. To reheat from frozen, pop them back into the air fryer at 350°F for 8 to 10 minutes; no need to thaw them first.

What to Serve With Rattlesnake Bites

These spicy bites go great with a dipping sauce like ranch, chipotle aioli, or spicy ketchup. Fresh veggies or creamy pasta are also great options if you want to balance out the heat of the bites.

Ingredients

  • 2 cups Pepper Jack cheese shredded

Instructions

    ¼ cup flour, 1 egg, ½ cup milk, ¾ cup bread crumbs, 1 teaspoon cayenne pepper, 1 teaspoon paprika, 1 teaspoon garlic powder
  • Dip each ball in the flour, then in the egg mixture and lastly in the breadcrumbs.
  • Place them in the air fryer basket and cook at 390°F (200ºC) for 10 minutes – or until they are golden brown.
  • Transfer to a sheet lined with kitchen towels and let them cool a bit before serving.
