I make this for summer cookouts, the Fourth of July, Memorial Day, or date nights at home because it feels special no matter when you serve it. The air fryer cooks the lobster perfectly in minutes, and the whole thing comes together faster than it has any right to for how impressive it tastes. Best enjoyed fresh, but leftovers keep in the fridge up to 2 days

How to Make Air Fryer Lobster Roll with Step-By-Step Instructions

Let me walk you through each step so your lobster roll comes out perfectly buttery and delicious every single time.

Season and Prep the Lobster

Place the fresh lobster meat in a ceramic baking dish that fits in your air fryer basket. Sprinkle the minced garlic clove, salt, and black pepper right over the top, then drizzle with olive oil and dot with small butter cubes across the surface.

You want the butter distributed evenly so every piece of lobster gets that rich, garlicky coating as it cooks.

Cook in the Air Fryer

Bake in the air fryer at 350°F (180°C) for 8 to 10 minutes, or until the lobster is fully cooked through and opaque.

Don’t rush this step. You’ll know it’s done when the meat is no longer translucent and has a slightly firm but still tender bite.

Toast the Buns

While the lobster finishes, lightly brush the hot dog buns with melted butter using a silicone basting brush and place them in the parchment-lined air fryer basket. Toast them for 2 to 3 minutes, pulling them out once they’re golden brown and warm.

Chop and Toss the Lobster

Once cool enough to handle, remove lobster meat from the dish, place it on a chopping board, and chop it into bite-sized pieces using a sharp chef’s knife or large kitchen shears, then return it to the warm baking dish with the remaining melted butter.

Toss in the chopped chives, fresh dill, lemon juice, and an extra pinch of salt and pepper. Mix everything gently until the lobster is fully coated in that herby, buttery mixture.

Load the Buns and Serve

Stuff the buttery lobster mixture generously into each toasted bun. Serve immediately with lemon wedges on the side and a sprinkle of extra chives on top if you’d like a little extra color and brightness.

Air Fryer Lobster Roll is my favorite way to bring the classic New England seafood shack experience home without the drive or the price tag. The lobster cooks tender and juicy in the air fryer, then gets tossed in warm garlic butter with dill, chives, and a bright squeeze of lemon. The toasted bun soaks up every drop of garlic herb butter and ties it all together. I make this for summer cookouts, the Fourth of July, and Memorial Day weekends because it feels truly special and comes together surprisingly quickly.

  • 1 pound uncooked lobster meat

Here are a few tips I’ve picked up from making these air fryer lobster rolls that’ll help yours turn out perfectly.
Season generously before cooking: Don’t skip seasoning the lobster well with salt, pepper, and garlic before it goes into the air fryer. This builds flavor right from the start and means the filling won’t taste flat once it’s assembled.
Use real unsalted butter: The quality of your butter matters here. A good unsalted butter gives you full control over the saltiness and produces a richer, more velvety coating on the lobster pieces.
Watch your cook time closely: Air fryer temperatures can vary by model, so start checking at the 8-minute mark. Overcooked lobster turns rubbery quickly, so pull it as soon as it’s opaque and cooked through.
Chop into generous pieces: Don’t chop the lobster too small after cooking. Bigger bite-sized chunks give the roll a more satisfying, restaurant-style texture and hold onto more of that buttery herb coating.
Toast the buns properly: Lightly buttered and toasted buns are non-negotiable. They add a slight crunch that holds up to the filling and prevents the bun from going soft and soggy the moment you load it.
Serve immediately for best results: Load the buns right before serving. The filling is at its best warm and freshly tossed, as the toasted bun loses texture the longer it sits once filled. If you have leftover lobster, refrigerate it for up to 2 days and warm gently in a skillet.

How to Store Leftovers

Store leftover lobster filling in an airtight container in the fridge for up to 2 days. Keep the filling and buns separate so the buns don’t absorb moisture and go soft.

When you’re ready to eat, reheat the lobster gently in a small skillet over low heat with a tiny pat of butter until just warmed through, then load it into a fresh bun.

Freezing isn’t recommended for lobster rolls since the texture of cooked lobster can turn rubbery after thawing. The fresh herbs also lose their brightness once frozen, so the filling is really best enjoyed within a couple of days.

What to Serve With Air Fryer Lobster Roll

A classic pairing is a simple side of crispy kettle chips or coleslaw for crunch and contrast. You could also serve them alongside a green salad with a lemon vinaigrette to complement the buttery flavor of the herb filling without competing with it.
