Easy, Tasty, and Fun: Slow Cooker Taco Meatloaf

Mix up your weeknight dinners with this flavorful and easy Slow Cooker Taco Meatloaf. Set it and forget it!

Ingredients You'll Need Gather your ingredients: lean ground beef, chopped onion, green chiles, taco seasoning, crushed nacho cheese chips, shredded Monterey Jack cheese, eggs, milk, taco sauce, shredded Colby Jack cheese, and optional toppings (scallions, tomatoes, sour cream, black olives, avocado, jalapeños).

Prepare Your Slow Cooker

Start by lining your slow cooker with heavy-duty aluminum foil, making sure it covers the sides and bottom. This makes cleanup a breeze!

Mix the Ingredients

In a large bowl, combine lean ground beef, chopped onion, drained green chiles, taco seasoning, crushed nacho cheese chips, shredded Monterey Jack cheese, eggs, and milk.

Shape and Cook

Transfer your meat mixture to the prepared slow cooker, pressing it down to form an even layer. Pour taco sauce over the top to keep the meatloaf moist and flavorful as it cooks.

Add Cheese

Just before you're ready to serve, sprinkle shredded Colby Jack cheese over the top of the meatloaf. Cover again just long enough for the cheese to melt.

Let It Rest

After cooking, allow the meatloaf to rest for about 10 minutes. This helps the juices redistribute, making the meatloaf moist and easier to slice.

Garnish and Serve

Garnish your meatloaf with optional toppings like shredded lettuce, diced tomatoes, sliced avocado, sour cream, or black olives.

Enjoy Your  Flavorful Creation!

Serve the meatloaf hot and enjoy this fun, tasty, and easy weeknight dinner. Perfect for the whole family!
