Hi, I’m Mandy, and Food Is My Favorite Adventure

I’m the home cook, food traveler, and recipe creator behind Pocket Friendly Recipes.

I started this site because I genuinely believe that feeding your family well shouldn’t break the bank, and after eating my way through 50 countries, I also know that incredible flavor doesn’t have to be complicated or expensive.

Whether I’m recreating the street food I fell in love with in India, putting a budget-friendly spin on the fresh pasta dishes I discovered in Italy, or bringing a little of the tapas spirit I found in Spain to a weeknight dinner table, everything I make is designed to be achievable, affordable, and genuinely delicious.

My Background

My background covers more ground than most food writers: formal training in communication, years cooking for family and friends, and food eaten in 50 countries that permanently changed how I think about flavor and value.

Education & Communication

I hold a BA (Hons) in Communication Studies, which means I’ve spent a long time thinking carefully about how to explain things clearly and engagingly, a skill that shapes every recipe I write. I also hold a Certificate in Teaching English to Adults, so breaking down techniques in a way that makes sense to every level of cook isn’t just something I try to do; it’s second nature.

A Lifetime in the Kitchen

I’m a passionate home cook, plain and simple. There’s nothing I love more than cooking for my friends and family, and watching people enjoy food I’ve made is genuinely one of the best feelings in the world. Over the years, I’ve developed a real instinct for getting maximum flavor from everyday, affordable ingredients, and that instinct is at the heart of every recipe you’ll find here.

Food Travel: 50 Countries and Counting

Food has always been my primary reason to travel. I’ve eaten street food in the chaos and color of India, rolled fresh pasta in Italy, lingered over tapas in Spain, and explored the depth and craft of traditional Chinese cuisine. Those experiences don’t just inform my palate; they shape the way I think about cooking. Real food, made with care, from ingredients that don’t break the bank.

Why I Cook the Way I Cook

Here’s what I’ve learned from decades of cooking and a lot of miles: the best food is rarely the most expensive food.

Some of the most memorable meals I’ve ever eaten were bought for a few dollars from a street stall. What makes them memorable isn’t price; it’s flavor, generosity, and care.

That’s the philosophy behind every recipe I develop. I’m not interested in cutting corners at the expense of taste.

I’m interested in cooking smarter: finding the substitutions that actually work, the techniques that save time without sacrificing quality, and the pantry staples that quietly do the heavy lifting in your meals.

I’m also the co-founder of Food Drink Life, a collaborative food and lifestyle publication that brings together writers, chefs, and creators from across the country. It’s one of the things I’m most proud of, and a big part of how I stay connected to what’s happening in food culture right now.
