Ingredients

For the chicken skewers:

  • 8 chicken thighs boneless and skinless, diced in 1 ½ inch cubes
  • 2 tablespoons fresh ginger grated
  • 1 tablespoon garlic minced
  • 1 lemongrass chopped

  • 1 lime squeezed
  • 2 tablespoons sesame oil

  • ½ cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon Sriracha or red chili paste
  • 1 lime juiced
  • 1 tablespoon honey
  • 2-4 tablespoons boiling hot water

Instructions

  • Soak the wooden skewers in water for at least 30 minutes to prevent burning.
